A Plant-based Wisniewski – Days One & Two

Day ONE of this fantastic voyage began with a dairy-free English muffin completely slathered with Smucker’s Simply Fruit Strawberry Fruit. Had a tasty PB & J on dairy-free wheat bread for lunch.

Planters NUT-rition Mix and celery/hummus made for delicious for snacks, but I’ve been spoiled by organic bananas as of late, so my non-organic banana left much to be desired. Stupid banana.

Lizz made spicy Boca chicken succotash for dinner….which she has cleverly named Soycotash. Ingredients include: yellow potatoes fried in olive oil; onion, corn, garbanzo, kidney and red beans.

IT’s SO GOOD.

Also found this crap on sale: Rex Goliath Pinot Noir. It’s not amazing, but it finishes well and warms the heart.

Same breakfast on day TWO, followed by leftover Soycotash for lunch. Tonight it’s gonna be more of the same wine while we enjoy MorningStar Buffalo Wings! Dinner will consist of pasta, red sauce and meatballs!

So far, so GOOD. And, well…the wine’s helping.
